南乳炸鸡+马铃薯炒饭 【Deep Fried Chicken Wings with Fermented Tarocurd Paste and Potato Fried Rice】





家里不缺马铃薯, 我的他总喜欢带回一大袋的马铃薯, 猜想啊购买马铃薯已经成为他的习惯了吧! 好在家里喜爱马铃薯之人多的是, 尤其是大丫头。 将马铃薯加入炒饭也是附从了她的意见, 此后也成了她最爱的一道炒饭了。  



忙碌的日子里, 简简单单的一道炒饭是最佳的选择,配上一碟炸鸡,又是一餐咯!赶着下班的太阳公公, 跑得很快, 我也快马加鞭的以锅仔盛着炒饭, 再加入了炸鸡, 就这样“咔嚓咔嚓”几张了! 哈哈。。。
  


南乳炸鸡+马铃薯炒饭】
7只鸡翅膀 (切半成中翼和翅膀)

腌料:
1+1/2大匙南乳酱, 1/2大匙磨碎鼓豆酱, 1茶匙细糖, 1/2茶匙盐,2大匙绍兴酒
1大匙麦芽糖, 蒜末,葱洱各一大匙

做法
1. 将鸡翼洗净, 沥干水份, 下腌料拌匀, 腌制3小时以上。 
2.  热炸油, 放入鸡翼炸至金黄色或熟透, 盛起, 配上炒饭一起享用。 


【马铃薯炒饭】
500克冷饭
另加1杯米所煮成的白饭
2粒马铃薯 (切成小颗粒)

3粒红葱 (切片)
1大匙蒜末
5条四季豆/乌龟豆(切粒)
适量鸡胸肉(切成细丝)
3粒B蛋

 [调味料]
3大匙蚝油, 2茶匙盐, 2大匙清水, 适量胡椒粉, 适量黑酱油

【做法】
1.  热适量炸油, 将马铃薯粒炸熟, 沥干油份, 备用。 (如果怕油腻,亦可将马铃薯粒蒸熟, 可是却没那么香浓了)
2.  热2大匙油锅, 爆香红葱和蒜末, 加入鸡肉丝和乌龟豆,翻炒片刻。
3.  加入冷饭炒至均匀后, 将饭推在锅的一边, 加入适量的油, 将鸡蛋敲入锅的中间, 煎至蛋液稍微变浓厚。 
4.  然后, 将饭粒盖在鸡蛋上 , 加入调味料和炸熟马铃薯,翻炒均匀, 试味,搭配南乳炸鸡即可享用。 



【Deep Fried Chicken Wings with Tarocurd Paste】

[Ingredients]
7 chicken wings (cut half)

[Marinade]
1+1/2 tbsp fermented tarocurd paste, 1/2 tbsp salted yellow bean paste, 1 tsp sugar, 1/2 tsp salt
2 tbsp shaoxing wine, 1 tbsp maltose, 1 tbsp finely chopped garlic and shallots

Method
1. Wash chicken wings and wipe dry.  Mix with marinade for at least 3 hours or more.
2.  Heat up oil, deep fry chicken wings until cooked. Remove and on plate and serve with potato fried rice. 

【Potato Fried Rice】

[Ingredients]

500g cooked rice
1 cup of rice and cooked
2 potatoes (cut into small cubes)
3 shallots (sliced)
1 tbsp chopped garlic
5 french beans (cut into small cubes)
adequate of chicken (shredded) 
3 eggs 

 [Seasonings]

3 tbsp oyster sauce, 2 tsp salt, 2 tbsp water, a dash of pepper
few drops of black soy sauce

【Method】

1.  Deep-fry potato cubes in hot oil until cooked.  Remove, drain well.  
2.  Heat up 2 tbsp oil in hot wok, . saute shallots and garlic over medium heat until fragrant, add shredded chicken and french beans, stir-fry until aromatic.
3.  Add in cooked rice, stir-fry over high heat until well combined.   Push the rice to the side of the wok, then crack eggs to the centre and keep stirring until well combined and slightly dry. 
4.  Add in seasoning and fried potato, toss well.  Taste and serve with fried chicken wings.
