金鸡报喜~芝士凤梨酥 【Parmesan Cheese Pineapple Tart】





之前,在FB看了姐妹们分享的漂亮“金鸡”,已经心动不已 。  之后, Esther 秘私了她的“金鸡凤梨酥”美图, 我被电到了。动手吧, 动手吧!拖了几天, 终于“金鸡来报喜了", 呵呵!

选了Zoe, Bake for happy Kids的入口即化~芝士凤梨酥, 一试就爱上了, 明确的选择啊! 也许是面粉的种类不同, 觉得面团有些粘手, 我另加了50克的面粉。 还有就是家里的粟米粉缺货, 我也以普通面粉取代, 很幸运的丝毫没影响到凤梨酥的口味, 依然还是香喷喷的入口即化!




【金鸡报喜~芝士凤梨酥】
~ 共做71粒凤梨酥

[材料]
200克无盐奶油,温室软化
40克糖粉, 过筛
30克蛋黄
220克普通面粉, 过筛
70克粟米粉, 过筛
100克parmesan cheese powder
1/4 茶匙泡打粉

凤梨馅: 71粒 x 8 克

[做法】
1.  将奶油和糖粉以中速打至松发(约2分钟),中途加入蛋黄搅拌均匀。
2.  将普通面粉, 粟粉, 泡打粉和芝士粉混合, 然后加入步骤(1)的奶油糊里, 搅拌均匀。
3.  将面团分出每个10克, 包入凤梨馅(8克),封口搓圆。然后取心型装饰品当鸡冠, 插上杏仁碎成鸡嘴, 以及黑芝麻成眼睛。
4.  放入预热烤箱里, 以165度烘烤20分钟或熟即可。  




【  Parmesan Cheese Pineapple Tart】
~ yield 71 rooster pineapple tarts

[Pastry]
200g unsalted butter, at room temperature
40g icing sugar, sifted
30g egg yolk
220g all purpose flour (original recipe use 120g) 
70g cornflour (original recipe use 120g)
100g parmesan cheese powder
1/4 tsp baking powder 



Pineapple filling:   570g (8g each)

【 Method】
1.  Cream butter and icing sugar at medium speed till light and fluffy for 2 minutes.  Then, turn to low speed and add in egg yolk, mix well.
2.  Combine flour, cornflour, parmesan cheese powder and baking powder,  and fold into butter mixture and mix to form a soft pliable dough.  
3.   Divide dough into 10g each, place pineapple filling (8g) in the center, wrap up and seal edges.  Arrange red heart shape sugar chip as rooster comb, insert almond nib as rooster beak and black sesame as rooster eyes.  Then, place on baking tray.
4.  Bake in preheated oven at 165C for 20 minutes or till golden brown.
