全麦比德面包~咖喱薯仔鸡丁馅料(Wholemeal Pita Bread with Curry Potato Chicken Filling





 又做了比德面包,这次的面包膨胀的很好。  第一次烘的比德面包只有3粒有膨胀,这次终于有所进步了, 六粒当中有5粒膨胀了。

想要pita bread 烘得漂亮,就要把面团擀得厚薄合度。 而且烤箱的温度必需掌握得好,必需以高温来烘烤,以使外层凝固。 也必需预先预热烤盘,让面包预先接触到热烫的烤盘, 这样可以大幅的提高成功率了。这次,我也把烤箱的温度提高了一些。结果,烘出来的面包就膨胀的很好了。

烘烤这面包时, 眼睛盯着烤箱看,期待着面包出现膨胀。 就好像烘烤马卡龙时, 希望那美丽的蕾丝裙出现, 呵呵!


 咖哩薯仔鸡丁馅料

材料:(切丁)
300克马铃薯(炸香), 200克鸡肉,50克洋葱,2大匙浓椰浆

咖哩料:
1大匙小葱末,1小匙蒜末,2大匙辣椒糊,2大匙咖哩粉

调味料:
3/4 小匙盐,1/2 小匙糖

做法:
1。热一大匙的麻油,以中火爆香咖哩料,加入炸好的马铃薯,鸡丁和洋葱同炒至香浓或鸡丁熟透。
2。加上椰浆和调味料,稍微炒均匀,盛起,即可配上比德面包食用。

Curry Potato Chicken Filling

Ingredients:(cubed)
300g potatoes (deep-fry), 200g chicken meat, 50g onions, 2 tbsp thick coconut milk

Curry Ingredients:
1 tbsp chopped shallots, 1 tsp chopped garlic, 2 tbsp chili paste, 2 tbsp curry powder

Seasoning:
3/4 tsp salt, 1/2 tsp sugar

Method:
1. Heat up 1 tbsp oil, saute all curry ingredients over medium high heat until fragrant.  Add in potato cubes, chicken cubes and onions, stir-fry briskly until aromatic, and the chicken meat are cooked through.
2. Add coconut milk and seasoning, toss well. Dish up, serve with Pita Bread.






全麦比德面包(食谱参考这里, 名食谱) 

柔软面团材料(面种):
50克普通面粉,30毫升清水,1/2 小匙即溶酵母, 1/2 小匙盐,1小匙糖

** 将所有材料混合放入搅拌盘里,柔成团。 将面团放置于温和处,盖好待发3小时。

主面团材料
320克高粉,80克麦, 15克糖,8克盐,15克食油,240毫升冷水,
6克即溶酵母, 70克柔软面团(面种)

做法:
1。将所有主面团材料混合,搅拌成粗面团。
2。加入面种团,继续搅拌成光滑面团。放置于温和处,盖好待发酵40分钟或双倍大。
3。将面团分成6份(大约115克)搓圆,然后擀薄至3mm 厚度,并搓成椭圆形或圆形,放在烤盘里,让面团酵20分钟。
4。将比德面团放入预热烤箱里以220度烘6分钟至膨胀起来, 即可。
5。加入各自喜欢的内馅即可。

Wholemeal Pita Bread 
(Recipe :Famous Cuisine Magazine and Cookbooks) 

Sponge dough ingredients: 
50g plain flour, 30ml water, 1/2 tsp instant yeast, 1/2 tsp salt, 1 tsp sugar  

* Combine all ingredients in a mixing bowl until forms soft dough.  Leave dough in a warm place to prove for 3 hours. 

Ingredients
320g high protein flour, 80g wholemeal flour, 15g caster sugar, 8g salt, 15g corn oil,
240ml cold water, 6g instant yeast, 70g sponge dough

Method
1. Combine all the ingredients coarse a dough. 
2. Add in sponge dough, continue beat until a smooth dough is formed.  Leave dough in a warm place to prove for 40 minutes or until doubled in size. 
3. Divide dough evenly into 6 portions (115g). Roll out, about 3mm thickness.  Roll the dough into oval or round shapes. place the dough on a baking tray to prove for 20 minutes again.
4. Bake in preheated oven at 220C for 6 minutes until Pita Bread in pluck up. Serve. 

这道咖哩咖哩薯仔鸡丁的辣度适中, 最适合小孩们吃的。 所以, 如果你是爱辣之人, 那么就必需自个添加咖喱粉了。

      不能每日吃发霉的旧作啊,会吃坏了的!哈哈哈。。。还有一个旧作是ready的,其它的没时间写了,又有一些忘了食谱。 所以,不多了,只有一两个了。。。哈哈哈!这model也太忙了,很难请到, 哈哈哈!

  19. Pita bread with curry, that's indeed a fantastic idea, i only thought of plain bread or roti prata/roti canai with curry. Good that you share this recipe so we can all learn how to make pita bread, I would love to try making it when I have the time :)
