港剧中不时都看到某某男主角, 为了取悦心爱的人, 大老远的绕道跑了几条街,就为了那新鲜出炉的蛋挞。 所以, 蛋挞是香港代表性的食物之一。 香港的蛋挞分为牛油蛋挞和酥皮蛋挞兩种。 牛油蛋挞即是今日我所要分享的蛋挞, 而酥皮蛋挞则类似西點的牛油酥皮, 层层的摺皮, 挞皮也较为厚些。
许多游客去到香港, 不免一定要光顾酒楼或茶餐廳, 尝尝那馳名的蛋挞。 而今慢慢地, 蛋挞也成了家庭化的食物了, 要吃蛋挞也无需去到香港了, 回家自个动手做吧!
【蛋塔, 食谱参考这里】
蛋液材料:
5粒蛋, 120克細糖, 350毫升清水, 100克淡奶
做法:
1. 将細糖加入清水里, 煮至溶解, 冷却备用。
2. 将蛋液以搅拌器打散, 无需打发。
3. 把淡奶和糖水倒入蛋液中, 过滤3次, 备用。
塔皮材料:
300克面粉, 2大匙細糖, 1大匙奶粉, 2大匙蛋黄粉
一粒蛋, 200克奶油
做法:
1. 将奶油和細糖以打蛋器搅打至混合, 加入蛋液,搅拌均匀。
2. 加入面粉混合, 以手指揉成团。
3. 取一小份面团轻轻按入挞模里, 紧压至贴合, 修边。
4. 送入预热烤箱以165度烘烤15分钟, 取出。
5. 将蛋液倒入塔里, 以165度继续烘烤20分钟至熟, 或蛋液不会摇即可。
【Egg Tarts】
Custard
ingredients:
5 egg, 120g
caster sugar, 350g hot water, 100g evaporated milk
Method:
1. Combine
sugar and hot water, mix until sugar
completely dissolved. Set
aside to cool completely.
2. Whisk eggs with evaporated milk together and then thoroughly
whisk in the sugar syrup, mix well.
3. Sift egg mixture 3 times, set aside.
Ingredients of pastry:
300g plain flour, 2 tbsp sugar, 1 tbsp
milk power, 2 tbsp custard powder
1 egg, 200g unsalted butter
Method:
1. Combine
butter and sugar in a large bowl and stir until evenly incorporated. Add in egg
and whisk for 30 seconds.
2. Add the flour, use your fingertips work with all the
ingredients and form into a ball of dough.
3. Take a small portion of the dough and gently press the
dough into the bottom and up the sides of the tart shell.
4. Bake in preheated oven at 165C for 15 minutes.
5. Remove from oven and carefully pour egg mixture into each
tart shell.
6. Continue bake for another 20 minutes until the custard is cooked
completely.
