最佳食谱#12~点心 (饮茶咯!)老婆饼【12】 (BREE # 12~Dim Sum, Wife Pastries)





孩子们都追问着, 为什么叫老婆饼, 那么是不是也有老公饼呢?
是咯哦, 为什么叫老婆饼呢?
也只有往网站里跑一趟寻找答案了。
老婆饼, 又被称为冬蓉酥。
是一款出自于广东的传统美食,
哎哎, 而我却自作聪明的以为是台湾的饼食呢!
传统的老婆饼内馅是含有冬瓜蓉的,
我不敢加入冬瓜蓉, 因为知道一定会被孩子们退货的,
也唯有舍弃了这项重要的材料~冬菇蓉!

只是稍微长气了些,  嘻嘻。。
老婆饼共有三种不同的传说故事,
好了, 我们边饮茶边听故事吧!






第一个故事: 古时后, 有一对富有的夫妇, 妻子制作了冬瓜内馅饼, 为夫者则在街市售卖,深受欢迎。于是, 丈夫便将其饼命名“老婆饼”。

第二个故事: 从前, 有个媳妇因病重的家翁, 而自愿卖身为奴。丈夫爱妻情切,发奋的研发了一种美味的饼, 并依靠买饼而赎回了爱妻。事后, 后人就将其饼称为老婆饼了。

最后一个故事是这样的, 著名的广州茶楼, 聘请了一为点心师傅, 从家乡带来了老婆自制的冬瓜饼让茶楼里其余的师傅品尝, 尝者皆称美味可口。于是, 便由此家茶楼改良推出, 并由于是这师傅的老婆制作, 并命名为老婆饼。


出乎意料, 这老婆饼竟然非常的畅销哦, 只是那老的投诉着内馅不够甜, 而我却认为甜度适中呢! 


老婆饼, 可做16个
食谱参考于君之

材料:
水油皮:200克普通面,30克細砂糖, 90克清水,20克全蛋液,20克奶油
油酥:160克普通麵粉,100克奶油

糯米餡:140克糯米粉,30克黄糖, 110克細砂糖,220克清水,70克奶油,60克白芝麻(炒熟)
表面裝飾:全蛋液適量,白芝麻適量

做法
1.將水,細砂糖和奶油放入鍋裡,以大火煮至沸騰。
2.轉小火,即刻將糯米粉倒入,快速攪拌均勻至完全混合,成為粘稠的餡狀。
3.離火,加入炒熟的白芝麻,攪拌均勻。
4.將炒好的糯米餡平​​鋪在盤裡,放入冰箱裡冷藏1小時至不粘手。
5.將冷藏的糯米餡分成16份,備用。
6.將所有水油皮材料混合,揉勻至光滑成團,可以拉出透明薄膜,放入保鮮袋中靜置15分鐘以上。
7.將酥皮材料揉勻成團,放入保鮮袋裡靜置15分鐘。
8.將油皮平割分成16份,酥皮則也用手揪出16份,滾圓蓋上保鮮膜避免風乾。
9.取一份油皮在掌心按扁,包入一份酥皮,裹好合攏捏牢,收口朝下,按扁。再以擀麵棍擀成長狀,捲起。再次以擀麵棍將麵團第二度擀成長狀,捲起,以蓋上保鮮膜靜置15分鐘。
10.取一份做法(9)的麵團,以手掌按扁,擀成中间稍厚,四周薄的皮。包入一份糯米馅,擀成扁圆饼(大约10cm), 收口朝下按扁,擺入烤盤上,塗上一層蛋黃液,再以叉子戳洞,然後再撒上適量白芝麻。
11.送入預熱烤箱以180度,烘烤18分鐘至金黃色即可。


35cm x 35cm的烤盘, 只能摆入9 个饼, 烘烤后会膨胀会收缩的哦! 

Wife Biscuits, yield 16】
Recipe adapted from HERE

Skin A:
200g all purpose flour, 30g sugar, 90g water, 20g eggs (beaten ), 20g butter

Skin B:
160g all purpose flour, 100 g butter

Glutinous Rice Filling:
140g glutinous rice flour, 30g brown sugar, 110g sugar, 220g water, 70g butter, 60g white sesame (Fried)

Topping: egg yolk + 1 tsp fresh milk for glaze and white sesame for deco

Method:
1.  Add water, sugar and butter into a pot and bring it to boil. 
2.  Turn into low heat, add glutinous rice flour and mix well until incorporated. 
3.  Remove from heat, add fried white sesame and mix well.
4.  Place glutinous rice filling on the plate evenly, and chill it in the refrigerator for 1 hour until it is not too sticky. 
5.  Remove it from fridge, and divide the filling into 16 portions
6.  Combine skin A ingredients, mix and knead together till smooth, cover with cling film and rest for 30 minutes.
7. Skin B: Mix flour and shortening smooth (do not over mix), cover with cling film and rest for 15 minutes.
8. Divide skin A and B into 16 portions equally and cover with wet cloth and shape both skins into balls.
9. Flatten skin A and place skin B on top, wrap into ball. Roll flat and roll up like a swiss roll. Repeat 2 times and leave to rest for 15 minutes.
10. Lightly flatten a lump of blended dough with your palm, then roll into a flat circle.  Wrap the filling in, place it with opening facing down and flatten to roll them as 10cm long flat and round shape.   Glaze with egg yolk and sprinkle with white sesame on top and finally dig a hole by fork.
11. Bake in preheated oven at 180C for 15 minutes till golden brown.




第一次做的老婆饼,形状较小, 觉得不像台湾的老婆饼。  于是, 当这老婆饼吃剩两块时, 我又马上出手再做第二次。 这回, 以原譜的双倍份量,一样做了16个饼, 只是将饼的体积擀大至10cm。  如此一来, 烘烤后稍微收缩的老婆饼,  感觉与台式老婆饼更相似了!

  6. Hi May, your wife biscuits look so good and qualified. May I check with you whether for the filling, you have used the normal glutinous rice flour or Kou Fen (used in making snowskin)? Can I use Kou Fen?
