牧羊人派 【Shepherd's Pie~ Chicken】



牧羊人派(Shepherd's Pie),是英国最经典的家常菜,可也是我家餐桌上的常客之一!牧羊人派,还有一个沙煲兄弟叫農舍派 (Cottage Pie), 差别在於牧羊人派使用羊肉,而后者则以牛肉制作,其余的材料和做法大致上相同。

牧羊人派采用的自然是羊肉, 可我这不吃牛肉羊肉的人,则只能使用鸡肉。 这道经过改良的经典派,已经是名不正,言不順了,也只有暂且“借用”牧羊人派之名了!

朋友, 欠了你一年半载的食谱,今天来还债了!呵呵! 



【牧羊人派, 可供用5-6人

[马铃薯蓉材料]
700克马铃薯 (屑皮后的重量,切片, 蒸熟压成泥)
3个蛋黄
150克奶油
1茶匙半盐
1大匙黑胡椒粒(敲碎)

【鸡肉酱】
400克鸡胸肉(切碎)
250克红葱(切碎)
50克蒜蓉
250克红萝卜(去皮切成小颗粒)
3 棵oregano(切碎)
150克江鱼仔高汤
2大匙香菜
1粒大番茄(搅成汁)
适量芝士(撒面)
奶油混合物: 1大匙牛油(软化)+1大匙面粉(调匀)

【调味料】
50克 LP worcestershire sauce
2大匙黑胡椒粒(磨碎)
50克番茄酱
1大匙蚝油
2茶匙盐
1茶匙黄糖
1/3鸡精块 

【做法】
1.  热3大奶油, 爆香葱碎, 加入胡萝卜炒约5分钟至软。  加入蒜蓉炒香, 下鸡肉碎翻炒均匀至鸡肉变色。  
2.  加入香菜和oregano炒至均匀。  加入调味料以及番茄汁拌匀, 下江鱼仔高汤煮滚。  最后, 加入牛油混合物煮沸至浓稠, 试味, 离火。然后, 将肉酱倒入备好的派盘里, 备用。
3.  将马铃薯泥和其余的材料混合均匀, 铺在肉酱上, 抹平, 撒上适量芝士。

4.  送入预热烤箱以190度烘烤20分钟至表面金黄即可。  



【Shepherd's Pie, for 5-6 persons

[Mashed Potatoes Ingredients]
700g potatoes,weight after peeling (slice, steamed and mashed)
3 egg yolks
150g butter
1+1/2 tsp salt
1 tbsp black pepper (grind)

【Chicken sauce】
400g chicken breast    (chopped)
250g shallots (chopped)
50g chopped garlic
250g carrot (peel and cut into cubes)
3 stalks fresh oregano (chopped)
150ml anchovies broth
2 tbsp parsley
1 large tomato (blended)
1 tbsp butter (soften)+ 2 tbsp flour (mix well)
 shredded cheese

【Seasonings】
50g LP worcestershire sauce
2 tbsp black pepper (grind)
50g tomato sauce
1 tbsp oyster sauce
2 tsp salt
1 tsp brown sugar
1/3 chicken cube

【Method】
1.  Heat 3 tbsp butter, saute chopped union and garlic until fragrant.  Add in carrot, stir-fry for 5 minutes.  Add chopped garlic, stir fry until fragrant and add the chopped chicken, stirring until chicken is well cooked.   
2.  Add parsley and fresh oregano, stir well.  Add seasonings, anchovies broth and bring mixture to boil.  Stir in butter mixture and bring it to boil until mixture is thickened slightly and taste.
3.  Remove from heat,  transfer the chicken mixture to baking dish.  
4.  Add egg yolks and butter into potato mixture, beat until smooth and creamy.  Season with salt and black pepper, mix well.  and spread mashed potato evenly over the top on the chicken mixture。  Then,   sprinkle with shredded cheese on top.  
5.  Bake at preheated oven at 190C for 15 minutes until golden brown.

免烤巧克力饼干蛋糕【No Bake Chocolate Biscuits Cake】




匆忙中凖备了这款谁都会做的~免烤消化饼巧克力🎂!让人惊喜的蛋糕,心喜自己做对了选择,小小的六寸蛋糕, 没几下一扫而空了, 下次要做8寸了, 哈哈!




【免烤巧克力饼干蛋糕】
食谱参考这里

[材料]
400克消化饼干 (捏成小块)
核桃和榛果各80克 (烤香)
90克黄糖 (这次我减至80克)
45克无糖巧克力粉
80克鲜奶
70克热水
80克奶油

[巧克力淋酱]
60克动物性鲜奶油
60克白巧克力或半苦甜巧克力 (切成小块)
10克奶油 (切成小块)

【蛋糕外层】
80克植物性鲜奶油, 打发

装饰:  烤香杏仁片和草莓

 [做法]
1.  将捏成小块状的消化饼和烤香核桃,榛果,混合备用。
2.  取一小锅, 加入黄糖和巧克力粉混合均匀, 分次加入热水和鲜奶, 搅拌至均匀。
3.  加入奶油, 以小火约煮5分钟至奶油融化成巧克力酱(过程中必须时而搅拌)。
4.  离火, 待稍微冷却(大约10分钟)。
5.  然后, 将巧克力酱倒入步骤(1)的饼块中, 以刮刀搅拌均匀至饼干均匀的沾上巧克力酱。
6.  倒入一个6寸活底圆模或慕斯圆模 (如采用慕斯圆模,必需在底部外层裹上一张锡纸), 以汤匙紧按至铺平饼干混合物, 放入冰箱里冷藏大约1小时。  
7.  这时, 将切碎黑巧克力和奶油放入碗里, 然后倒入鲜奶油, 隔水加热并不断搅拌至巧克力和奶油完全融化。   
8.  将温热的的巧克力酱倒入饼干蛋糕上, 静待几分钟至巧克力酱变得平整。 
9.  将蛋糕连模放入冰箱里, 冷藏4个小时以上。  取出, 脱模即可享用。  (脱模时, 以小刀沿着蛋糕模壁或以热毛巾围绕着蛋糕模子)
10.  将打发鲜奶油涂抹在蛋糕的外层和顶部, 抹平。
11.  撒上烤香杏仁片作为装饰, 摆上草莓即可。

** 经验之谈:
记得要紧压, 否则蛋糕会出现很多洞洞哦!







【No Bake Chocolate Biscuits Cake】

[Ingredients]
400g digestive biscuits (break into small pieces)
80g roasted walnut
80g roasted hazelnut
90g brown sugar ( i used 80g)
45g unsweetened cocoa powder
80g fresh milk
70g hot water
80g butter
1 tsp vanilla extract (optional)


[Chocolate layer]
60g UHT whipping cream
60g white or dark chocolate (chopped)
10g butter (cut into cubes)

Top layer
80g whipped cream

Decoration:  Roasted almond slice and strawberry 


[Method]
1.  In a mixing bowl, Combine digestive biscuits and roasted walnut, hazelnut set aside.
2.  In a pot, add sugar and cocoa powder and mix well.  Gradually add in hot water and fresh milk, mix until incorporated.
3.  Add butter,  simmer over small heat for 5 minutes or until butter is fully dissolved. ( stirring occasionally
4.  Remove from heat, set aside to cool slightly for above 10 minutes and add vanilla extract, mix well.
5.  Then, pour the chocolate mixture over  the biscuit mixture and mix well until the biscuit crust have coated with the chocolate 
6.  Pour the chocolate biscuit mixture into the 6 inches loose bottom pan, use the back of the spoon to press the mixture evenly and place the cake pan into the fridge for about 1 hour.
7.   While waiting the cake to set, place chopped chocolate and butter in a bowl.  Then, add in whipping cream , gently melt the chocolate over water simmering in a saucepan until melted and smooth. 
8.  Take the biscuit cake out from the fridge and pour the warm chocolate mixture across the top of the cake.  Let it cool for a minutes until the chocolate mixture spread evenly.  Place the cake pan into the fridge for 4 hours.
9.  Remove the cake from the refrigerator, slice it and serve. (you may use the hot tower to heat the sides of the pan to make it easier to remove)

10.  Cover the whole cake with whipped cream and smooth the side and top.
11.  Sprinkle with almond slices and decorate as your own desire.

威尼斯曲奇【Venice Cookies】


网络爆红的一款年饼, 拍摄了但却迟迟未将它记录下。 
今日不知何解, 却忽然”头风“又将它记载于此, 也方便以后自己找回食谱吧!



【威尼斯曲奇

[材料]
250克奶油(含盐)
90克糖粉(我放80克)
150克底筋面粉, 过筛
100克玉米粉
50克粘米粉


做法
1.  将牛奶和糖粉搅拌至乳白淡色。
2.  加入已经混合过筛的粉类, 搅拌均匀即可。
3.  将面糊装入裱花袋里, 挤出各人喜爱的饼状。
4.  放入预热烤箱165度烘烤约18-20分钟至熟或稍微金黄色即可。  

【Venice Cookies

[Ingredients]
250g salted butter
90g icing sugar (i used 80g)
150g low flour or cake flour, sieved
100g corn flour
50g rice flour

【Method
1.  Cream butter and icing sugar at medium speed till light and fluffy.
2.  Add in flour and mix well.  
3.  Place the batter into piping bag and pipe onto lined paper tray with desired design. 
4.  Bake in preheated oven at 165C for 18-20 minutes until slightly brown.



榛果曲奇, 将以上材料里的底筋面粉减少70克, 以榛果粉取代即可。  
好香好香的曲奇, 今年家里最为畅销的年饼!

Hazelnut cookies, reduce 70g of low flour or cake flour, then replace it with ground hazelnut.

台式凤梨酥 【Taiwanese Pineapple Shortcakes】


正月14, 眼看着这年啊即将溜了, 感慨时光的流逝!
去年在巴厘岛时, 友人赠送的漂亮塔模, 终于有机可乘让它重见光明了.   
在这里祝大家元宵节快乐!


【台式凤梨酥
(食谱参考这里)

[材料]
250克无盐牛油
30克糖粉
3粒蛋黄
380克普通面粉
60克奶粉
1茶匙淡奶

[凤梨馅料]

[做法]
1)将牛油及糖粉用搅拌机以中速打至松发(大约两分钟),转低速,逐粒把蛋黄和淡奶加入, 搅拌均匀。
2)把过筛的低粉和奶粉加入,混合均匀。
3)取出适量的面团(约25克), 包入馅料(22克), 搓圆, 压入模型里。
4)连模把面团排入铺纸的烤盘上, 以170度烤约25分钟或呈金黄色即可。
