最佳食谱#12~点心 (饮茶咯!)港式萝卜糕 【6】 (BREE #12~Dim Sum, Radish Cake)






双剑合璧的食谱, 参考了从爱人家牵回来的南瓜糕, 同时也参考了中式点心食谱书。 这是为了消灭掉冰箱里的两条白萝卜, 而动手做的。 

无话可说时, 就是挤不出两行字句, 真是的!







【港式萝卜糕, 食谱取自中式点心

材料: 
300克白萝卜丝
250克粘米粉
8克马蹄粉
8克澄粉
500毫升清水
50克虾米(浸软,剁碎)
20克红葱酥
50克干香菇 (浸软, 切丁)

调味料:
1茶匙盐,1大匙糖, 1茶匙胡椒粉, 1小匙麻油

表层装饰:葱花,红辣椒丝

做法:
1. 将粘米粉, 粘米粉, 马蹄粉混合, 加入调味料, 再把清水倒入, 拌匀备用。 
2. 热2大匙热油, 以小火爆 虾米, 加入香菇丁和萝卜丝翻炒至香。 
3. 倒入一半的粉液(步骤1),以小火搅拌煮至浓稠。  
4. 离火, 再把剩余的粉液倒入,加入红葱酥搅拌均匀。 
5. 将萝卜面糊倒入一个涂油的6寸方模里, 铺平表面。
6. 放入蒸炉, 以大火蒸50分钟。 
7. 待冷却后,脱模, 并摆上装饰材料,切块食用, 亦可用慢火煎至金黄色食用。.




【Turnip Cake , recipe adapted from Chinese Snacks, dim sum cook book

Ingredients: 
300g white radish (shredded)
250g rice flour
8g water chestnut flour
8g wheat starch
500ml water
50g shelled shrimps(soaked, )
20g crisp red onion
50g dried mushroom(soaked and diced)

Seasoning:
1 tsp salt, 1 tbsp sugar, 1 tsp pepper, 1 tsp sesame oil

Topping:  Spring onion, red chili 

Method: 
1.  Combine rice flour, wheat starch,  chestnut flour and seasoning then pour in water, mix well.
2.  Heat 2 tbsp of oil, saute shelled shrimps until fragrant, add mushroom and white radish, stir evenly.
3.  Pour in half of the flour mixture (step 1),  keep stirring with low heat until it shows thick status. 
4.  Remove from the heat,  pour the balance of the flour mixture, add crisp red onion and mix well. 
5.  Pour the batter into a greased 6" square mold and steam for 50 minutes until cooked.
6.  Cool and cut into piece,  or it can be pan-fried with a little oil before serving.
