吃饱没事做,既然学人做起点心来了。 真的,从没想过要下手做点心, 一想到点心就会想起猪肉。 我,是个不吃猪肉的人, 而点心多为猪肉所做的。 所以,我只吃鱼类的点心,去哥哥的点心店,我也只挑鱼和虾类的点心。
今天,不知为何兴起做了这个鹌鹑烧卖。 当然,烧卖也都是猪肉做的,做了而自己不能吃,真是太冤枉了!所以,我把它换成了鸡肉烧卖,哈哈哈!
鹌鹑蛋烧卖
(食谱取自yumyum77)
材料:
300半瘦猪肉碎
100鱼胶,3粒马蹄(切碎)
大约30片方形云吞皮
大约30粒鹌鹑蛋,煮熟,去壳
调味料:
1/2小匙盐,1/2小匙麻油
1小匙糖,1/4 小匙胡椒粉
1小匙米酒,1 1/2 大匙薯粉
做法:
1 将肉碎和鱼胶加入盐搅拌至起胶后,加入马蹄碎和调味料拌匀。 放入冰箱冷藏1-2小时才用。
2。取一片云吞皮包上馅料,捏成花形,将一粒鹌鹑蛋放在中间。 放入涂上油的蒸笼里,用大火蒸10分钟左右至熟。取出,趁热配上辣椒酱食用。
刚蒸出炉的鹌鹑烧卖,我终觉得很怪,这个烧卖好像很白。后来,想想。。原来是用了鸡肉的关系。嘿嘿!
Steamed Sao Mai With Quail Egg (Recipe: YumYum 77)
Ingredients:
300g half lean and fat port, minced, 150g fish paste, 5 water chestnts
Seasonings:
1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp sesame oil, 1 tsp sugar, 1 tsp chicken stock granules, 1 tsp chinese cooking wine, 1 1/2 tbsp tapioca flour
Method:
1. Combine minced meat, fish paste, salt and mix until very sticky. Add in waterchestnuts, seasoning and mix well. Chill in the fridge for 1-2 hours before using.
2. Use a piece of wanton wrapper to wrap up some filing and shape like a flower. Arrange a quail egg on the central and place onto a greased steaming tray. Repeat the same until all filing finished.
3. Steam over high heat for 10 minutes or until cooked. Remove from steamer and serve hot with chilli sauce.
