很久没做面包了,终于又传来面包香了! 女儿说这个小小粒的面包,放入口里也方便极了,不必咬了一口又一口。 我想,下次我还要做小粒些,这个面包还不算小。 不然, 她如此的一口,我真怕涨大了她的小嘴呢! 哈哈。。。
芝士牛油小面包 (Little Butter Cheese Buns)
Tangzhong Dough 汤种法:-
50g bread flour 50克高粉
35ml hot boiling water 35毫升热水
** 混合成面团后,用保鲜纸盖上。放入冰箱里最少12小时后使用。
Mix to form a dough, cover with cling film and leave dough to cool in the
fridge for at least 12 hours.
A。200g bread flour, 200克高粉
50g plain flour, 50克普通面粉
30g sugar,30克幼糖
1tsp instant yeast,1小匙干酵母
1/4tsp salt,1/4小匙盐
70ml fresh milk,70毫升鲜奶
1 egg,1粒蛋
B. 30 butter, 30克牛油
C. 50g Mozzarella Cheese

Method 做法:
1. 混合所有(A)的材料,然后将汤种面团撕片加入搅拌均匀。
Combine all ingredients (A) and add in tangzhong dough mix well.
2.将牛油加入面团里,用中速搅拌至光滑。
Add in butter and mix on medium speed until dough is smooth.
3. 把面团搓成圆团,将面团放在盆中,盖上一块湿布,发酵40分钟至双倍大。
Shape dough into a ball, leave to prove for 40mins or until doubled.
4.把甜面团分成每份27克,然后休面10分钟.
Divide sweet bread dough into 27g each. Let rest for another 10mins.
5.将面团搓圆,包上1大匙的奶油. 发酵45分钟。
Rub the dough into a ball and wrap in 1 tbsp butter. Prove for 45 minutes.
Combine all ingredients (A) and add in tangzhong dough mix well.
2.将牛油加入面团里,用中速搅拌至光滑。
Add in butter and mix on medium speed until dough is smooth.
3. 把面团搓成圆团,将面团放在盆中,盖上一块湿布,发酵40分钟至双倍大。
Shape dough into a ball, leave to prove for 40mins or until doubled.
4.把甜面团分成每份27克,然后休面10分钟.
Divide sweet bread dough into 27g each. Let rest for another 10mins.
5.将面团搓圆,包上1大匙的奶油. 发酵45分钟。
Rub the dough into a ball and wrap in 1 tbsp butter. Prove for 45 minutes.
6. 搽上蛋黄,撒上适量芝士放入中间层预先烘热的烘箱里,烘烤160度15分钟。
Egg wash and sprinkle with mozarella cheese, place in the middle shelve of the
oven. Bake at 160c for 15mins.
