实兆远~福州月饼 (Sitiawan~Fuzhou Mooncake)



终于做了这款从小吃到大的家乡月饼,这也是今年第一道开跑的月饼, 然而却因某种因素而延迟贴上了。童年时, 每当中秋节日将至, 便被妈妈差遣到舅舅店里帮手做月饼了,尤其是三个弟兄们, 小小年纪就成了舅舅家杰出的小帮手了。 

那日, 妈妈托人带来了舅舅所做的白莲蓉和咸肉馅的月饼。 她老人家知道我喜欢芋头和南瓜馅的, 特别交代这两样月饼买断货了。之前从大哥店里取了3kg 的南瓜馅, 我就自己动手做吧! 妈妈就这样那样的透露了一些做这月饼的心得。  




许多人都说这福州月饼不像是月饼, 尤其是我家老的。 不管它像不像月饼, 但它的确是实兆远市,福州人的传统月饼。 从小到大的记忆里, 就只有这款的福州月饼, 所以它也在小小的心灵里落地生根,是它陪着我长大, 也是它陪我度过了那数十载的中秋佳节。 

我个人认为这福州月饼相似于苏式月饼, 差别于苏式月饼的表面没有涂上蛋液。 弟弟说这个月饼做的太棒了, 并不逊色于舅舅的,自己也觉得相当满意呢!


 福州月饼, 可做28个

水油皮材料:
340面粉 100克粟油,165克温水,15克糖粉,10克盐

酥油皮材料:
280克面粉,135克白油或奶油

馅料:650克南瓜馅+50克烤香白瓜子 (每份25克)

表面: 蛋黄液, 杏仁片


做法:
1. 将所有水油皮材料混合, 揉匀至光滑成团,可以拉出透明薄膜,放入保鲜袋中静置30分钟以上。
2. 将酥皮材料揉匀成团,放入保鲜袋里静置30分钟。
3. 将油皮平割分成每个22克,酥皮则用手揪出每份14克,滚圆盖上保鲜膜避免风干。
4. 取一份油皮在掌心按扁,包入一份酥皮, 裹好合拢捏牢,收口朝下,按扁。再以擀面棍擀成长状,卷起。 再次以擀面棍将面团第二度擀成长状,卷起, 以盖上保鲜膜静置15分钟。 
5. 取一份做法(4)的面团, 按扁,擀成中间稍厚,四周薄的皮。包入一份南瓜內馅(25克),收口朝下按扁, 摆入烤盘上, 摆上一片杏仁片于中央, 涂上一层蛋黄液。(可以将面团杆大些, 容易操作)
6. 送入预热烤箱以160度,烘烤20分钟至金黄色即可。 


**福州月饼的馅料, 煮的比其他月饼的馅潮湿(没有那么干及硬).  所以, 亦可以普通的内馅来替代。 但是,就必须预先将内馅放入冰箱冷藏后, 才取出使用, 这样就容易操作了。 

【Sitiawan~Fuzhou Mooncake, makes 28】

Skin  A:
340g plain flour, 100g corn oil, 165g warm water
15g icing sugar, 10g salt

Skin B:

280g plain flour, 135g shortening/unsalted butter (I used shortening)

Filling

650g pumpkin filling + 50g roasted melon seed (kuaci) (25g each)

Topping:  egg yolk for glaze and almond slices for deco


Method:

1. Combine skin A ingredients, mix and knead together till smooth, cover with cling film and rest for 30 minutes. 
2. Skin B: Mix flour and shortening smooth (do not over mix), cover with cling film and rest for 30 minutes. 
3. Divide skin A and B into 28 portions equally (skin A , 22g and skin B 14g each), cover with wet cloth and shape both skins into balls. 
4. Flatten skin A and place skin B on top, wrap into ball.  Roll flat and roll up like swiss roll.  Repeat 2 times and leave to rest for 15 minutes.
5. Use fingertips and press both ends to form a shape, roll skin into thin rounds, wrap in pumpkin filling and place onto a baking tray, arrange with almond slice on top and glaze with egg yolk.
6. Bake in preheated oven at 160C for 20 minutes till golden brown.

** Fuzhou mooncake fillings are softer and moist compare to other mooncake filling (not so dry ).  You can also use ordinary filling instead of mooncake filling。 (Required refrigerated before use, easy to operate )

  11. Love the look of your mooncake. They look so scrumptious. I wanted to try this out and tried to translate it in google but the translation was really bad. Some make no sense. I wonder if you can let me know the ingredients in English especially for the filling. What filling did you use? Thank you.

    1. Yes,that pumpkin filling can get easily from the bakery shop in Malaysia, but i think it might be diffficult to get it in oversea. You may replace it with the other filling like, red bean paste, yam paste or others!
