冷當雞 (Rendang Chicken)




说真的, 煮过那么多鸡的料理, 而这道经典的冷当鸡却好久未曾煮过。  模糊的记忆里,曾在中学时期的家政课里, 煮过这道冷当鸡,很令人怀念的一段年少时光!

相较这道冷当鸡与咖喱鸡, 我个人觉得冷当鸡的味道香浓, 就连儿子也说这股香味是咖喱鸡所缺少的香味。 这也许是这道料理添加了烤过的椰丝, 使这道经典菜肴香浓惹味十足了! 







【冷當雞, 食谱参考于鸡肉佳肴, 稍微更改

材料
1kg 鸡肉(斩块)
2支香茅 (拍扁)
2片姜
280克稀椰浆
(80克浓椰浆+200克清水)
100克浓椰浆
40克炒香椰丝

做法:
1. 将鸡肉用热水烫过, 去除腥味, 沥干水份, 备用。
2. 烧热3大匙油, 爆香姜片和香茅, 加入酱料以小火炒至香浓。
3. 加入鸡肉块, 炒至鸡肉稍微转色, 然后倒入稀椰浆及调味料煮至出油沸滚, 再转小火煮至汤汁收干。
4. 加入浓椰浆继续煮滚, 最后加入炒香椰丝拌匀即可。

【Rendang Chicken】


Ingredients A
1kg chicken(cut into pieces)
2 stalks lemongrass(bruised)
2 sliced of ginger
280ml thin coconut milk
(80ml thick coconut milk +200ml water)
100g think coconut milk
40g toasted grated coconut

Ingredients B (pounded):
15 dried chilies, soaked
3 red chilies, seeded
3 stalks lemongrass
20g ginger,  15g galangal

Seasonings: 3 tsp sugar, 2+1/2 salt

Method:
1. Let the chicken immersed in hot water for 10 minutes, drain well。 

2. Heat up 3 tbsp oil, saute ginger and lemongrass until fragrant. Add in ingredients B and stir-fly at lower heat for few minutes.

3. Add in chicken, and stir well. Pour in thin coconut milk and seasonings bring it to boil. Slimmer with lower heat until the gravy is thick. 

4. Pour in thick coconut milk and bring to boil. Lastly add in toasted grated coconut and stir well. dish up and serve.
