小小帽子 (Pie Tee )



 这道小食可是百吃不厌的。 每次在 Chicken Rice Shop 都会看的小食,小小个的吃都吃不够。  如今,自己在家动手做,那么就可吃个够够的,不必order又order了。。。


 小小帽子(Pie Tee)
(食谱取自蓝赛珍,本地风味第146)

小帽子材料 Pie Tee Ingredients
60克普通面粉 60g plain flour
60克粘米粉 60g rice flour
1粒蛋 1 egg
182毫升水 182ml water
1/8小匙盐 1/8 tsp salt
¼胡椒粉 ¼ pepper

做法 Method:
1.将面粉,粘米,盐和胡椒粉混合,加入蛋液搅拌, 再慢慢倒入水搅拌成光滑的面糊。Combine flour, salt and pepper, add in egg, slowly pour in water and continue to mix until a smooth batter is formed.

2.烧热油,将模型浸入热油中至热,取出先将模型放在吸油纸上吸干油份,再将模型沾上面糊,放入热油中。先将整个模型放入热油中,再快快的拉起模型使小帽子张开成花边形。Heat up oil for deep-frying.  Heat pie tee mould in hot oil.  Remove mould and wipe away any excess oil at the bottom of mould.  Dip mould in batter then immerse mould in hot oil.  Quickly pull up mould slightly above the oil so that pie tee shell can open up like a flower.

3.炸至稍微浅金黄色及脱模,在继续炸至金黄色,捞起吸干油份,待冷,放入罐里。  
   Deep fry until shell gets a little brown and can be removed from the mould.  Continue to fry until golden brown.  Dish and drain on kitchen paper.  Leave to cool before storing in an air-tight tin.

馅料 Fillings

100克鸡肉碎 100g shredded chicken meat
100克虾肉碎 100g diced prawn meat
150克沙葛丝 150g finely shredded sengkuang
少许红萝卜丝 a bit finely shredded carrot
1大匙蒜末 1 tbsp chopped garlic
1小匙盐 1 tsp salt
¼ 小匙胡椒粉 ¼ tsp pepper
1 1/2大匙蚝油 1 1/2 tbsp oyster sauce
2大匙麻油 2 tbsp sesame oil

做法 Ingredients:

1.热麻油爆香蒜末,加入鸡入和虾肉丝炒至香,加入沙葛和红萝卜丝。Heat up sesame oil, sauté garlic until fragrant, add in chicken and prawn meat stir-fry until aromatic.  Add in sengkuang and  carrot.

2.加入盐,胡椒粉, 蚝油和少许水煮至收干试味,盛起。Add in salt, pepper,oyster sauce and water cook until vegetables are soft and gravy is dry.  Taste and dish up.

3.将小帽子盛入馅料即可。Fill Pie Tee mould with filling.

 


                  做这个小食,放入油里炸时的技巧真的很重要, 不然就开不成花了。。。

  3. 这个也是高难度的东西也。。。。。。。哈哈哈。
    我和eileen,mandy一起做过,成品真的很lagu,可是功夫蛮费时的。可是很开心哦,很有成就感。

    1. 这小帽子是我第二次做了,的确是很费时,但是吃的很快。。。
      偶而挑战一些高难度的东西,才有成就感啊!哈哈哈。。。。
      很羡慕你们,可以一起的烘焙,一起的笑。。。我也想飞去你们那儿了!
