做这类似的面包是为了家里的孩子们喜爱, 尤其是那大公主,最爱巧可力。 心想不知是否是自已宠坏了她,才造成她这样那样的。。。
做父母的都有许多的无奈,又担心孩子没的吃,又怕孩子不吃。 改天应该试试,如果孩子不吃,那么自已吃算了,只是体重会增加,肚皮会胀大。。。嘿嘿!
咖啡巧可力面包 (Coffee Buns)
(面团参考: 这里)
Tangzhong Dough 汤种法:-
100g bread flour 100克高粉
70ml hot boiling water 70毫升热水
** 混合成面团后,用保鲜纸盖上。放入冰箱里最少12小时后使用。
Mix
to form a dough, cover with cling film and leave dough to cool in the
fridge for at least 12 hours.
Basic dough ingredients 面团材料:
A。 300g
bread flour, 300克高粉
100g plain
flour, 100克普通面粉
80g sugar,80克幼糖
1tbsp instant yeast,1大匙干酵母
1/2tsp salt,1/2小匙盐
175ml fresh
milk,175毫升鲜奶
1 egg,1粒蛋
3 tbsp coffee powder 3大匙咖啡粉
B. 60g butter, 60克牛油
C. 可可粒 Chocolate Chips
Method 做法:
1. 混合所有(A)的材料,然后将汤种面团撕片加入搅拌均匀。
Combine all ingredients (A) and add in tangzhong dough mix
well.
2. 将牛油加入面团里,用中速搅拌至光滑。
Add
in butter and mix on medium speed until dough is smooth.
3. 把面团搓成圆团,将面团放在盆中,盖上一块湿布,发酵40分钟至双倍大。
Shape
dough into a ball, leave to prove for 40mins or until doubled.
4.把甜面团分成每份50克,然后休面10分钟.
Divide sweet bread dough into 50g each. Let rest for another 10mins.
5.将面团搓圆,包上可可粒(25克). 发酵45分钟。
Rub the dough into a ball and wrap in chocolate chips(25g) filling.
Prove
for 45 minutes.
6. 搽上蛋黄,撒上适量的杏仁放入中间层预先烘热的烘箱里,烘烤160度15分钟。
Egg wash
and sprinkle with almond
, place in
the middle shelve of the
oven.
Bake at 160c for 15mins.
Sedap..Ilove anything with coffee..
