起司马铃薯内馅面包 (Cheese Buns with Potato Cheese Filling)





跨越了新的一年,总是希望新的一年带来新的希望,
然而, 跨年未曾带来了新希望, 而却捎来远在家乡的妈妈病重的消息, 
跨年的第一日,妈妈中风入院了。

病情危重的她,昏昏沉沉了几日在家乡, 
然而当我和弟兄们致电回乡时,性格坚强的她总是声称无事,
为的只是不想孩子们劳累的奔波回乡, 
妈妈总是贴心的为孩子们着想, 而却忽略了自己的病情的严重性。

当人们都在睡乡中, 天空依然还是朦朦胧胧,毫无一点的光线时,
二弟俩夫妇抵达了家门, 看到妈妈脸色苍白的躺在病榻上,
右边脚的痛楚, 使她无法行动自如了,
右手却是连一支轻如鸿毛的牙刷都提不起来了,满脸仅是布满了被病魔折磨的痛苦,
她, 妈妈一夜之间苍老了,让人看了心痛极了!

感恩! 二弟即时将她送至医院, 否则后果不堪设想,
经过数日医生的治疗下,妈妈的手脚也渐渐的恢复了力气,
看到她右手被大筒针刺过留下许多的痕迹,那每日9支的药水输入血管内, 
也在她的手上留下许多的淤青肿块, 也终于使她回复了一些的气力,
然而,昔日那灵活般的手脚, 如今已不复再了。

恢复尚需一段时日, 但愿经过此劫后, 妈妈将从此远离病痛, 
但愿妈妈她,早日康复! 






起司马铃薯内馅面包 (Cheese  Buns with Potato filling)
(依然采取了之前, 北海道牛奶面包的食谱)

内馅:(厨苑食谱) 
550克马铃薯泥, 30克Philadelphia Cheese, 25克奶油, 25克鲜奶油, 少许盐, 少许胡椒粉

表面: 芝士丝

做法
1. 将 philadelphia cheese, 奶油和鲜奶油混合搅拌至光滑。 
2. 加入马铃薯泥, 盐和胡椒粉拌匀, 放入冰箱里冷藏大约30分钟以上。
3. 取出, 取一大匙马铃薯内馅稍微搓成圆球(大约25克), 做完为此, 在放入冰箱里, 备用。 


湯種材料:
50克高筋粉, 250毫升鲜奶(也可用清水取代)

做法
1. 把高筋粉放入鲜奶里拌勻,用慢火煮, 必须边煮边搅以免烧焦,至成糊狀。離火待涼。
2. 用保鮮膜蓋好,放涼后,即可使用。亦可放入冰箱里3至5天,只要颜色不变即可。 这个份量可做兩條的面包



面包材料
540克高筋粉, 86克細砂糖, 8克盐, 10克奶粉, 11克干酵母(我用1大匙), 86克蛋液(我用1粒全蛋, 另外一粒则以蛋白加入, 剩余的蛋黄用来涂面), 59克動物性鮮奶油,54克鲜奶, 184克汤种面糊, 50克无盐奶油(unsalted butter)

做法:
1把所有材料(除奶油外)依次倒進面包机里(先放湿的材料,再放干的材料)。

2. 选择面包机的“面团”( dough)的功能,材料搞拌至成面团,就放进已融解的牛油,继续搅拌,至可擴展至薄膜。

3. 面包机停止后,等待面团第一次发酵完畢,至发酵双倍大。取出,在桌上洒点高筋粉。用手按压面团, 挤出空氣。

4. 将面团分成24等份(大约48克),  用保鮮膜蓋著,室溫靜置 15分鐘。 包入马铃薯内馅, 封口, 將收口朝下放在烤盘上进行最后发酵至8分滿,塗上全蛋液, 撒上芝士丝。

5. 放入预热烤箱里以170度, 烘烤20分钟。取出放在铁架上放涼,即成。

    吓得我们带他到处求医。幸好最后没事了。
    你的心情我了解,父母老了,我们只能尽力让他们安享晚年。
