选了这个Delia Smith 的咖啡味的蛋糕, 非常浓厚的咖啡味。
从来没做过咖啡口味的蛋糕,以为孩子们会不爱不吃。
结果,这个蛋糕获得众人所爱,切了三片的蛋糕给了二弟,二弟至电来也赞好。
第二天,这蛋糕都当早餐吃完了, 孩子都爱这蛋糕的香味和蛋糕里的核桃碎。
如果你是喜爱咖啡之人,又怎能错过这个香浓的咖啡味的蛋糕呢!
Recipe :Delia Smith
Ingredients:
115g self raising flour
1 tsp baking powder (I didn't add in)
115g spreadable butter
2 eggs
115g brown sugar
1 tbsp instant coffee powder
50g walnuts, finely chopped
(i used 75g)
Topping & Filling:
250g mascarpone
(I used 125g philladelphia + 125g whipping cream)
1 tsp instant coffee powder
1 tbsp brown caster sugar
1-2 tbsp milk
12 walnut halves
Method:
1. Put eggs, brown sugar and butter into a mixing bowl, use high speed to whisk until smooth and frothy.
2. Add in sifted flour, coffee powder, whisk to a smooth, creamy consistency for about 1 minute. Fold the chopped nuts into the mixture.
3. Poor into a lined 18cm baking tin and bake in a pre-heated oven at 165C for 30-35minutes.
4. Remove from the oven and after about 30 seconds loosen the edges by sliding a palette knife all round them turn the out onto a wire cooling tray. Cutting into 2 layers.
5. In a bowl, combine all the topping ingredients and whisk until frothy and smooth. Spoon the cream into a piping bag and pipe cream onto the 1st layer of cake, sandwich them together. Then pipe the rest of the cream on top of the cake.
6. Then finish off by placing the walnuts in a circle near the edge. Store in a polythene box in the fridge.
咖啡核桃蛋糕
材料:115克自发面粉
115克黄油 , 2 粒蛋
115克 黄糖
1 大匙即溶咖啡粉
75克核桃(搅成碎粒)
、
表面和内馅:
250g 马斯卡 乳酪
(我用 125克 philladelphia + 125克打发鲜奶油)
1小匙即溶咖啡粉
1 大匙黄糖,1-2 tbsp 鲜奶
12 粒核桃 (切半, 烘熟)
做法:
1。将黄油,黄糖及蛋放入搅拌盘中打至松发。 加入黄油继续打片刻。
2。加入筛过的面粉和咖啡粉打至光滑,然后加入核糖碎搅拌均匀。
3。将蛋糕糊倒入18寸涂上油的烘盘里,以165C烘烤30-35分钟。
4。待冷后,便切成两片备用。
5。蛋糕内馅:将所有材料混合搅拌至光滑成奶油状。倒入挤花袋里,挤在第一片的蛋糕上,盖上第二片蛋糕成三文治。 再继续挤完所有的馅料, 摆上核桃即可。 放入冰箱30分钟。
