提拉米苏 (Tiramisu)


这是旧作。记得这蛋糕是大女儿要求做的,可惜做的非常差劲。太多问题出现了,洒下了糖粉后,忽然有事情外出了,匆促之下便把蛋糕放入了冰箱里,回来后看到的是那即将融解的糖粉。 



提拉米苏 Tiramisu
(食谱参考:星期天的烘焙时光
 15cm 圆模 15cm round mould      

巧可力低座 Chocolate base
3 粒蛋, 3 eggs
65克糖粉, 65g icing sugar
40克特幼面粉, 40g superfine flour
12克可可粉, 12g cocoa powder
20克无盐奶油, 20g unsalted butter

奶油层 Cream Cheese:

175克奶油乳酪, 175g cheese cream
35克糖, 35g caster sugar
1小匙柠檬汁, 1 tsp lemon juice
40克酸奶油, 40g yorgunt
25克鲜奶, 25g fresh milk
2克吉利丁粉, 2g gelatin powder
140克鲜奶油, 140g whipping cream
½ 大匙绿茶粉, ½ tbsp coco powder (我没放)

装饰 Decoration
可可粉, cocoa powder
糖粉, icing powder

1可可蛋糕:蛋液充份均匀后,加入糖, 用搅拌机搅拌搅打至湿性发泡,提起搅拌
   器时有尖端的泡泡会呈下垂。
   Cocoa cake :  Whisk eggs and caster sugar at high speed until stiff 
   and glossy.

2. 把面粉和可可筛入,用刮刀快速搅匀, 再加入奶油,用刮刀快速搅匀。
   Add in flour and cocoa powder into no. (1) use a hand held whisk and
   add in butter whisk until well combined.  

3.倒入圆型模具,放入预热烘炉,用160度烘35分钟。取出蛋糕,待完全冷却后,切
   成两片。
   Bake in pre-heated oven at 160c for 35mins. Remove from oven until 
   cooled. Slice into 2 pieces.

奶油层 Cream Cheese:

1)把鲜奶油和糖粉打发。
   Whisk whipping cream with icing sugar to form state. Refrigerate to
   chill.
2) 在另一个小锅中,将吉利丁粉和鲜奶隔水溶化备用
   Combine dissolved gelatin and fresh milk. Double boil till totally
   dissolved.  Set aside.

3) 取另一个盘奶油乳酪和糖搅拌到没有结块。加入酸奶油和柠檬汁。
   In another bowl, beat cream cheese until smooth.  Add in sugar, yogurt
   and lemon juice beat until smooth and creamy.

4) 再将(2)拌入,搅拌均匀。然后把(1)加入,用搅拌器充分搅拌。
   Pour in no.(2) whisk well and add in no. (1) and mix until just 
   combined.

5) 取出一半的步骤(4),加入绿茶粉。
   Pour half of no. (4) add in green tea powder.

6) 15cm圆形蛋糕脱模,放入一片可可蛋糕,然后再倒入步骤(4)的奶油乳酪
   Use a 15cm cake ring , place a layer of cake and pour in no. (4) cream
   Cheese.
 
7)继续放入第二片的蛋糕,然后倒步骤(5)的绿茶奶油。放入冰箱冷却1小时 。
  Lay another cake layer and pour in no. (5) green tea cheese cream
  Chill for at least 1 hours before removing the cake ring and
  decorate the cake.

8)奶油凝固后,利用筛网将可可粉洒在蛋糕上。
   Chill to set. Dust with cocoa powder.

7)放上蛋糕模板,再洒上糖粉即可。
   Put the cake mould pattern and dust with the icing sugar before 
   serving.
   





这蛋糕被我切的乱糟糟的。。。真是,唉!但是,这蛋糕的味道还不错,孩子们吃到晚上只剩一块了,还好还好。。。


孩子们不看外表,只看内在美。。。
