九月九日是儿子的生日,这蛋糕是我为他做的生日蛋糕。这几天都很忙,忙,忙!所以到今天才放上。 儿子喜爱芒果蛋糕,刚巧邻居送来了许多芒果,所以我便參考了制作芒果蛋糕的程序,还预先切了芒果做试范芒果的摆设,但是,却无法达成,最后只有放弃。于是,便改变主意做了这棉花糖鲜果蛋糕。说起这蛋糕真是惭愧,其实这是我第三次做生日蛋糕。 记得去年10月初试俩次,蛋糕体还烘的不错, 只是在搽上鲜奶油时,有些困难,不平均,功夫不到家嘛!这次的蛋糕真是问题多多,蛋糕体也重复烘了俩次,也还是麻麻的!唉,到了搽
上鲜奶油时,我的问题又出现了,这鲜奶油被我搞得一蹋糊涂,没办法搞得好它。几乎想要放弃,去买一粒蛋糕算了吧!但是,又不甘心,只好想法子盖上那凹凸不平的鲜奶油,结果,临时偷拿了女儿的棉花糖来当装饰,把整粒的蛋糕都铺满了棉花糖。哈哈!好奇怪的蛋糕也!儿子看了这粒蛋糕说:晕!但是,我觉得鲜果的摆设还嘛不错的嘛!嘿嘿。。。。
棉花糖鲜果蛋糕 Marsh Mallow Fruit Cake
制作海绵蛋糕:
“七寸圆形脱模“
*make a 7” round cake (with removable bottom cake pan)
A 材料:
4 egg yolks (large), 4粒蛋黄
20g caster sugar, 20克幼糖
50g corn oil, 50克玉米油
60g milk,60克鲜奶
1/2tsp vanilla extract, 1小匙香精
90g cake flour ,90克 特幼面粉
B 材料:
4 egg white (large,) 4粒蛋白
1/4小匙柠檬汁
或1/4小匙
苏打粉
1/4tsp lemon juices or 1/4tsp cream of tartar
60g caster sugar, 60克幼糖
做法:
Method
1. Lightly whisk egg yolk with sugar.
轻轻搅拌蛋黄和幼糖。
2. Add in corn oil and milk, stir to combine.
加入玉米油,搅拌均勺。
3. Add in cake flour, mix well, set aside.
加入 特幼面粉,混合备用。
4. Add lemon juices into egg white, beat till foamy.
把柠檬汁加入蛋白,用搅拌机打至起泡沫。
5. Gradually add in sugar, beat till stiff peaks (十分发 / 硬性发泡)~ (hand mixer
speed 3
takes about
5mins)
再把糖陆续加入,打至十分发 或 硬性发泡。
6. Take 1/3 portion of egg white mixture and use hand whisk to mix with egg
yolk mixture
till light.
把蛋白分三次加入蛋黄糊里,用手搅拌成光滑。
7.Pour batter into the pan (don’t line with paper and don't use a
non-stick pan), bake at
pre-heated oven at 140c for 25mins (at
lower rack), then increase to 170C (at lower
rack) and continue to bake for 30mins,Set aside to cool in room temperature。
把蛋糕糊倒入七寸圆形脱模里,不需铺纸。放入预热的烤箱140度烘25分钟 (底层),然
后 改用170度(底层)度烘30分钟即可。待冷。

How to make clear glaze
1/2cup water,½杯清水
1/4cup sugar,1/4 杯糖
1/4cup water 1/4杯清水
1大匙木薯淀粉或玉米淀粉
1tbsp tapioca starch or corn starch
Method,做法:
1. Add 1/2cup water and 1/4cup sugar in a small saucepan over medium heat, stir
till sugar dissolved.
加入½杯清水和1/4 杯糖 在热锅里,用中火不停搅拌至糖溶解。
2. Mix tapioca starch with 1/4cup water in another small mixing bowl.
混合1大匙木薯淀粉或玉米淀粉和1/4杯清水在另一个小锅里。
3. Pour the tapioca mixture into the hot water stirring constantly. Allow the
mixture to simmer for one to two minutes until it has thickened. Remove the pan
from heat.
把(2)倒入(1)里搅拌倆分钟至小滚和浓缩,熄火。
4. Set aside to cool in room temperature, brush clear glaze on
the fruits.
冷却后,即可搽在鲜果上。

For decorating the cake,装饰蛋糕的材料
Strawberries 草莓
Canned peach 罐装桃
Kiwi fruit 奇异果
Blueberries蓝莓
Cherries 樱桃
Mango 芒果
300g non-dairy whipping cream
300 克鲜奶油 打发
Method
1. Place one piece of sponge cake on a cake disc (at a revolving decorating
cake stand for
easy frosting)
把一片海绵蛋糕放在蛋糕盘上。
2. Spread evenly a layer of whipped cream, top with chopped mango.
均匀展开一层奶油,然后铺上芒果肉。
3. Continue to place second piece of sponge, spread evenly a
layer of whipped cream, top
with chopped mango.
继续把第二片海绵蛋糕放上,均匀展开一层奶油,然后铺上芒果肉.
4. Top with last piece of sponge cake, frost the whole cake with
whipped cream.
把最后一片海绵蛋糕放上,再将整粒蛋糕搽上鲜奶油。
5. Decorate with, peach, kiwi fruit,Strawberry, Cherries and
blueberries.
铺上桃,奇异果,草莓,樱桃和蓝莓装饰。
6. Brush with clear glaze.
搽上亮油即可。
我用这棉花糖来盖上那难看不平的鲜奶油。
