芝麻芋香年糕球(Sesame Balls With Yam & Nian Gao Filling)




年糕是春节里的一种传统食品,亦和“年高”谐音。 所以也就有了“年年高”的意思,象征着长寿之意。 总而言之是万事皆高,无论是钱财,职位或小孩子都一年比一年高, 也寄寓了五谷丰登的美好愿望。

今日的这款年糕美食, 虽然是耗时了些, 却是一道很不错的年糕吃法。在理发院翻看书籍或杂志, 已经成为你我的习惯了吧! 而这款年糕的吃法, 即是在理发院烦闷的当儿,翻看杂志时所获得的灵感!




春节期间前往小阿姨家拜年, 无意中得知她收藏了许多的“宝贝”(照片里的中国陶瓷),一直都放置在储藏室长达10多年了, 亦想赠送于学校做义买了。我喜出望外, 台了一整箱回来, 据知储藏室里的深处还有两箱, 我在虎视眈眈着呢! 


做法:(可做19粒)
1.  将番薯, 面粉和糖混合成团, 分成每粒12克, 备用。(我所蒸熟的番薯里以有一些水份, 所以无需加水了)
2.  再把芋头泥分成每粒12克, 每个包入一小方块年糕。
3.  将做法(1)的番薯团粒压扁, 包入做法(2)的芋球粒, 沾满白芝麻即可。(稍微弄湿手掌会容易操作)
4.  放入油锅里, 以中火炸至金黄色即可。

Sesame Balls with Yam & Nian Gao Filling
(makes 19 balls)

Skin Ingredients:
153g  mashed orange sweet Potato
80g all purpose flour, sift
50g glutinous rice flour, sift
50g caster sugar

Filling:
240g yam, steam and mash finely
nian gao, cut into 1.5cm cubes

Method
1. Combine skin ingredients and knead until dough is mooth. divide dough into 12 g each. ( My steamed potato have enough of water, so i  didn't add in water.  You can add in some water, if you dough is too dry.)

2. Divide yam filling in to 12g each and each one wrap in nian gao filling  and shape into a ball.

3. Roll glutinous rice mixture into a ball, flatten slightly, put yam ball method (2) in the middle, wrap it into a ball and roll it in sesame seeds.  (Slightly wet your palms will be easy to operate or you may lightly brush the ball with water and roll it in sesame seeds )

4. Deep fry in medium hot oil until  lightly golden, remove and drain out oil.





冷却后, 切半的年糕球。

    This is a delicious combination of all the ingredients! I only usually had the yam fried with nian gao! Perfect with a cup of warm Chinese tea!
