又是妈妈从家乡带出来的螃蟹, 我自作主张的煮了这道米粉螃蟹汤。新鲜的蟹肉使这汤汁更加的鲜甜了, 妈妈提过煮这蟹汤时无需另煮鸡汤或江鱼仔汤, 因为螃蟹本身就很有味道了,足于使汤汁鲜甜味美。所以,家里那几个嘴挑的孩子们都无声无息地,把碗里的食物给吃光光了!
材料:
六只螃蟹(洗净斩块), 15粒鹌鹑蛋(煮熟去壳), 8片姜, 4棵菜心, 2 升(litre)清水
1包米粉(浸泡水里20分钟)
调味料:
1大匙盐, 2大匙绍兴酒, 少许胡椒粉
做法:
1. 锅里熱1大匙麻油,爆香姜片加入螃蟹炒至螃蟹外壳转成红色, 加入清水煮至沸滚。
2. 加入调味料和鹌鹑蛋, 加入米粉继续煮至小滚, 最后加入菜心即可享用。
** 我把米粉预先煮熟, 沥干水份, 享用时才舀螃蟹汤加入米粉里(这样就不怕汤汁都被米粉吸光了)。

ReplyDeleteIt' is ok! It quite difficult to find a fresh crab in my area , luckily my brother went back hometown quite often, so that my mum can tumpang him to bring some fresh crabs for me, hehehe.
