久违了的面包,久违了的面团和久违了的厨房。很久没做面包了,今日一早便决定做了这个辫子面包。
还把冰箱里的三种不同的豆类加入,于是我便把它取名为三色豆辫子面包了。每次看到莎莎家的辫子面包绑的很美,就想到要一试了,今日终于有机会来帮面包绑辫子了。
平日总是帮俩个女儿的头发绑辫子, 而帮面包绑辫子还是第一次呢!哈哈哈。。。。
Tangzhong dough 汤种法:-
50克高粉50g bread flour
35毫升热水35ml hot boiling water

** 把高粉放入碗里。加入热水,用汤匙将面粉混合成面团. 然后,用保鲜纸盖, 放入冰箱里1小时至48小时.
Place flour in a mixing bowl , add hot boiling water and mix to
form a rough dough, cover bowl with
cling film and leave dough to cool in the fridge for at least 1 hour, and up to
48 hours.

40克幼糖40g sugar,

1小匙干酵母1
tsp instant yeast
1/4小匙盐1/4 tsp salt,

B。80毫升鲜奶80ml fresh milk,
1 egg 1粒蛋1 cold egg
35克牛油35g butter

60克核桃(稍微弄小) 60g walnut (cut into small)
60克杏仁
60g almond
50克向日葵种子50g sunflower seeds
Method 做法:
1. 混合所有(A)的材料, 再把汤种面团撕片加入。
Combine (A)together,tear the tangzhong dough
into pieces and add in.
2. 再慢慢的加入鲜奶,用低速度搅拌机搅拌,混合直到面团结合一起。
Add in fresh milk gradually
and use low speed mix until dough is well combined and leave the sides of bowl.
3. 将牛油和三色豆加入面团里,用中速搅拌至光滑。
Add in the butter, and 3 types of nuts and
mix on medium speed until
dough is smooth.
4. 把面团搓成圆团,将面团放在盆中,盖上一块湿布,发酵40分钟至双倍大。
Shape dough into a ball,
leave to prove for 40mins or until doubled.
5. 把面团分成每份75克, 然后再分成3份, 将这3份的面团搓成一样长条。
Divide dough into 75g each and then divide the 3 portions of dough
evenly. To knead these three dough into thin strips of same length.
6. 然后黏紧头部,排好把它编成辫子般,由如把头发编着辫子一样,发酵45分钟.
Braid the thin strips and pinch the ends together. Do the same with the remaining. Let prove for 45 mins.

7. 搽上蛋黄,放入中间层预先烘热的烘箱里,烘烤170度15分钟。
Egg
wash and place in the middle shelve of the oven. Bake at 170c for
15mins。
我还以为这类型的面包,孩子一定不爱,那知孩子们都赞好,我还奇怪的问他们:“为什么你吃这面包?女儿回答:有很多豆豆呀!原来是豆豆。。并非面包做的好呢!
做这面包时,我问有谁要学绑辫子的,大女儿回答她已经会了。小女儿大声回答:”我要,我要。“ 学徒完毕高兴的说:”我终于会绑辫子了。“ 其实,我也想说我终于帮面包绑辫子了,yahoo!
