香脆杏仁饼 (步骤图)(Crispy Almond Cookies)






不管是再忙, 或是再没心情, 年饼还是依然如火如荼的烘烤着, 而这款的饼干也绝对是每年家里不可缺少的年饼之一。

春天的脚步逼近了, 春天的气息也弥漫了一片天空,它悄悄的带着一片红彩,气势如虹般的飞跃而来, 且让我们来迎接这万马奔腾的马年吧! 






食谱取自去年的年饼之一,参考这里。 (对不起, 之前写错了烤盘的尺寸, 应该是13“ x 13")

【Crispy Almond Cookies】
Baking tray : 13 x 13

Ingredients A:
160g butter, 100g icing sugar

Ingredients B:
30g egg white, 2 drops of almond essence (optional)

Ingredients C:
150g cake flour , 30g ground almonds

Topping:  
2 egg yolks,  50-70g almond flakes 

[Method]
1.  Cream butter and icing sugar on high speed for 1 minute, scrape mixing bowl and continue to mix on high speed for 5 minutes.
2.  Add in egg white and almond essence, mix on medium speed for 1 minute and high speed for 4 minutes. 
3.  Add in flour and ground almonds, mix for 1 minute to form a dough.
4.  Spread the dough onto a baking tray and spread evenly.  (you may cover a plastic sheet on top and roll evenly with a rolling pin.  Remove the sheet)
5.  Bake in preheated oven at 170C for 10 minutes until half cooked.  Take out and brush with egg yolk.  Cut into rectangles and place a piece of almond flake on each of the cookies. 
6.  Then, continue to bake for 5-8 minutes or till golden brown.

    1. 发觉做烘焙可以忘却烦恼, 还能过得很充实, 只是今年太忙了, 年饼也做少了!
      这个非常好吃, 没动手前, 孩子们吵着要上面有一片杏仁的饼呢!

  5. oh, I noticed you only place one pc of almond flakes, but I put 2 pcs each, and have to choose the best shape of almond flakes, this was the killing part !!

    1. Sonia, 我服了你! I placed 1 pc of almond and felt headache already, if i put 2 pcs i will "xi kia kia" liao, hahaha!
      I don't have enough good shape almond and i have run out of patience, i even put down half shaped almond too :)

    1. Li Shuan, 下次你回来。我做给你吃!拍照真的需要时间,这 批照和饼干都在很赶的时间内完成的,饼干的蛋黄也涂的不完美,—口气做了7盒,很累!

  12. i just saw jocelyn made this too and i was asking her about the tray size...i'm quite keen to make this but i know making this sounds quite tedious...gotta chk if the tray size can fit my oven or not..thx again for sharing this wonderful looking cookies!

    Sorry about my previous comment that I had to remove. I had a typo error... That's why :p

    You must have a huge oven in order to bake this large tray of almond crisps! I reckon that you should bake this and sell... I'm sure that you will make lots of $$$ baking these!
