咖哩鸡挞Curry Chicken Pie




这挞是几个月前做的,还记得那时,儿子问我: 妈咪,你会做加哩鸡挞吗? 我说: 没做过,不过可以试一试,如果不好吃你也要帮我吃啊!结果,当我一烘完这10个挞,儿子便一口气帮我消化了4个,一边吃一边说:好吃,好吃。我心想:不知是真是假,我知道这儿子很喜欢吃辣的食物,所以这加哩鸡挞的内馅我加多了辣椒,只见他吃的满脸通红的,边喝水。呵呵!我可怜的孩子,即然中了妈妈的招!

紫黄蕃薯玫瑰花包 Potato Rose Pau



玫瑰花盛开咯!我家的玫瑰花盛开咯!等了很久终于等到它开花了,真不容易也。 这蕃薯玫瑰花包,其使是前几个星期做的,女儿很喜欢。 我本人更喜欢黄蕃薯,因为我觉的黄蕃薯比较软,好吃。



其实这是洛神花的树,女儿说这样拍很美。

今年自己做上海月饼,这个月饼还蛮好吃的。 第一次做,虽然不太美,蛋黄也扫得不好。但是味道还不错。 加油吧!

番薯小白兔刺猬包 Rabbit & Hedgehog Pau



这动物包已经很久没有做了,记得自从去年女儿的学校义卖会后,便没再做了,想必是怕了吧!那时总共做了80粒的番薯小白兔刺猬包,可惜并没拍下照片。最怕就是这些 义卖会,七早八早就要起来,把自己弄的累到半死。如今,小女儿又要求做这。。。。唉!做吧!

五彩繽纷巧可力棒棒糖 Cake Pop


今天小女儿的同学要来做project,所以做了这棒棒糖。。。谁知个个放飞机,结果,冰箱里剩了一大堆的棒棒糖。。。谁要?????

对着这站不起来的小东西,有点失望。而女儿却在一旁说:“妈咪,很美,很美!” 我开完笑的回答:“妈咪当然美,只是这小东西站不起来,就不美了。”

北海道牛奶蛋糕Hokkaida Chiffon Cupcakes



 

这个漂亮的小蛋糕是从nasi lemak lover 那儿看到的,久久都不敢尝试。后来,终于忍不住了,到处去找杯纸。于是,便开工了。。。但是,奶油挤的不够深,不够多, 还忘了洒下糖粉。不过,还蛮好吃的,呀呼!



女儿拍的,不错吧!



  

食谱参考:Nasi Lemak Lover

Hokkaido chiffon cupcakes 北海道牛奶蛋糕
*makes 9 cupcakes


Chiffon cake
3粒蛋3 egg yolks
20克糖20g sugar
35克粟油35g corn oil
60克鲜奶60g milk
70克特幼粉70g cake flour


3粒蛋白3 egg whites
25克糖25g sugar



内馅Filling
60克鲜奶油60g dairy whipping cream
10克糖10g sugar
1大匙蛋白粉1tsp instant custard powder



糖粉装饰Icing sugar decoration

做法:
Method


1蛋黄糊: 搅拌盆中用打蛋器拌匀蛋黄,幼糖,玉米油,鲜奶和面粉,搅拌均匀备
   用。

   To made egg yolk batter, combine egg yolks, caster sugar, corn oil and 
   Fresh milkFold in super fine flour until forms batter.

2蛋白糊: 把蛋白用搅拌机打在至起,再把糖分3次的加入,用搅拌机打至硬 (碗
   拿起,而蛋白糊不会掉下)
   To make egg white foam,beat egg whites until mixture forms solf peaks.
   Gradually add in sugar, beating at high speed until frothy and stiff peaks
   form.

3蛋白糊次加入蛋黄糊里,用搅拌刀拌均匀
   Gently fold beaten egg white foam into egg yolk batter, use cut and fold
   method until blended.

4倒入纸杯里,预热烘炉,用160度烘20分钟。
    Scoop batter into  paper liners to about ¾ full and bake in pre-heated 
    oven at 160c for 20mins.

5. 把鲜奶油和糖一起打发。
   Beat whipping cream with sugar till firm and stiff

6.加入蛋黄粉,混合均匀。
   Add in custard powder, mix well.


7. 将蛋黄糊挤入蛋糕里,筛下糖粉。放入冰箱冷却后享用。
  Pipe custard cream into cupcake and dust with icing sugar.
  Refrigerated before consume.



   

鲜橙燕菜Orange Agar-agar



 

 看到nasi lemak lover的鲜橙燕菜,忍不住马上开工了。结果,10粒的鲜橙变成了鲜橙燕菜,没一会儿便吃完了。还送给了弟弟2粒,他还说:为何给我鲜橙,我自己可以买啊!

2tsp agar-agar powder
  400ml pure orange juices (from 4 oranges) or mix with store-bought orange juices
  50g rock sugar, depend on the sourness of the oranges, adjust accordingly4.     
    Method. 
   1. Cut the orange to half. Extract the juice using a manual juice extractor, drained.
   2. Remove the flesh and reserve the orange “shell”.
    3. Mix agar-agar powder, orange juices and rock sugar in a saucepan.
   4. Bring to boil till rock sugar dissolved, drained. Cool the mixture slightly.
5 Pour into the reserved orang "shells"
   6. Chill in the refrigerator for several hours till cool and set. Serve chilled.

卡通冰皮月饼 Crystal Cartoon Mooncakes




今年的第一批卡通冰皮月送了给女儿的补习老师。
记得去年,第一次学做月饼,之后便没完没了的,不停的一批又一批,上瘾了。
结果,益了街坊!就这样,我开始了,我爱上了。。。。烘焙。









冰皮月饼(6粒)

A

720克白莲蓉馅

35克烤香瓜子

(每粒大约100克)
   (粒迷你大约55克)

B

120克糖粉

18.75克白油

(全部材料拌匀)

加入93.75ml果汁
½茶匙salt
37.5克淡奶
37.5克粟粉
82.5克糕粉
(每粒70克)粒迷你大约30克)


1.将混合粉,和白油略搓

2.加入93.75ml果汁,盐,淡奶和其它材料搓成面团。休
   息10分钟

3.将面团均匀分每份70克,馅料均分100克,搓圆。

4.面团包入馅料,搓圆放入模型按出。

5.放入冰箱雪藏几小时



Ingredients:

A. 120g icing sugar
     18.75g shortening

B. 93.75ml juice
     1/2 tsp salt
     37.5ml evaporated milk
     82.5g koh fun flour
     37.5g cornflour

1.Combine A

2. Combine juice, salt and flavouring. Stir into icing sugar mixture. Mix in evaporated milk. Add    remaining ingredients and mix to a soft and smooth dough. Cover dough and stand for 10 minutes.

3. Lightly flour your hands with cornflour. Divide dough to 6 portion of 70g. Roll each portion into a ball. For mini mooncake divide dough to 30g each.

 4. Filling.    Knead and flatten mooncake paste into a rectangle. spread melon seed evenly on paste. Roll up paste like a swiss roll. Cup mooncake paste into 6 portion of 100g roll each portion into a ball.

 5. Lightly flour your hands with cornflour. Flatten a portion of dough. Place a ball of filling in the centre. Wrap up and seal edges. Press into a floured mooncake mould. Tap mould to remove mooncake.

 6. Chill before serving
