30g egg white 135g cake flour 18g cocoa powder a pinch of salt
1. Sift cake flour, salt and cocoa powder together. 2. Cream butter until smooth, add icing sugar and mix well. 3. Add in egg white in 2 portions separately, beat well after each addition of egg well combine.
5. Fold in sifted flour into butter, mix well with a rubber spatula. 6. Place the batter into piping bag and pipe onto lined paper tray with desired design.
7. Bake preheated oven 175 deg C for about 15 minutes.
