南瓜糕 (Kueh Talam~ Labu Kuning)







轻松写意的日子又轻易的溜走了总是觉得这样的日子,姗姗来迟而却似瀑布般的飞流直下 如果能长久的留住那片刻的悠闲, 长伴我左右, 那该多好啊。

日子像是一道门, 一重重一关关的走过了,
多希望能徘徊在门外, 不去偷窥门内那漆黑的一片,
让这道门的枷锁封闭着, 锁住了明日, 锁住了那未来的路。

日子不是过去了, 而是储蓄在记忆深处,
追忆着那一点滴的快乐, 享受着追忆所带来的伤感,
在这记忆之地, 有你这位过客, 而又茫然记忆中多了一个你!
重活记忆中的日子, 我老了, 你也老了。

日子不是储蓄机 而是一副提款机,
经过一日复一日的提款, 日子是有减无增的,
溜了的日子, 老了我们。





轻松写意的学校假期里, 做了这道好吃的糕点。



南瓜糕 (Kueh Talam~ Labu Kuning)
(食谱参考于Aroma Magazine )


南瓜层的材料和做法
170克蒸熟南瓜,200克浓椰浆,50克粘米粉
25克薯粉, 80克细糖, 2粒鸡蛋, 1/2小匙盐

**将所有材料混合均匀后, 倒入果酱机里搅拌至糊桨, 放置5分钟后, 备用。  


上层椰浆的材料和做法:

225克浓椰浆, 50克粘米粉, 1/2小匙盐

** 将所有上层材料混合均匀后, 备用。 

装饰

120克白椰丝 + 少许盐蒸上5分钟
少许南瓜泥

* 将蒸熟的南瓜泥加入椰丝中混合均匀即可。 



南瓜糕的做法:

1.  将糊南瓜糊舀入已经涂上油的蒸杯里至7分满。
2.  放入沸滚的蒸炉里以小火蒸至8分钟至熟。 (记得将蒸盖以干净的毛巾裹上, 以确保水滴不会滴在糕点上而使糕点的表面不平滑。)
3.  取出后, 将椰浆层的糊浆舀入蒸熟的南瓜糕里, 继续以小火蒸上4分钟即可。 
4. 离火, 待冷却后才将以脱模, 配上南瓜椰丝即可享用。 




Kueh Talam~ Labu Kuning

Pumpkin layer :
170g steamed pumpkin, 200g thick coconut milk,50g rice flour
25克 tapioca flour, 80g caster sugar, 2 eggs,  1/2 tsp salt

** Combine all the ingredients and pour into a jug of an electric blender process until smooth. Let the better rest for 5 minutes before pouring into the cups. 


Coconut Layer:

225g thick coconut milk, 50g rice flour, 1/2 tsp salt

** Combine all the ingredients, stir well until smooth, set aside。 

Decoration

120g grated white coconut + a pinch of salt , steamed for 5 minutes
Some steamed pumpkin

*  Add steamed pumpkin with steamed coconut, well combine.  



Method: 

1.  Lightly grease the cups with vegetable oils.
2.  Pour the pumpkin layer mixture into prepared cups and steam at small heat for 8 minutes.  (Remember to wrap the lid of steamer with a clean towel so that the kueh would have smooth surface. )
3.  When the  pumpkin layer is done steaming and add the coconut layer mixture over the pumpkin layer , continue to steamed for 4 minutes until set. 
4. Remove and leave to cool before removing from cups. Coat with pumpkin granted coconut and serve

      I bought the fresh thick coconut milk from the shop near my house and it is just a normal coconut milk. I think you can easily find it from the market too!
