香辣奶油鸡 ( Milk Butter Curry Chicken)


  
每次上餐馆时, 菜单里总是少不了奶油鸡。 于是, 就决定自已也来煮个奶油鸡, 但是却加了咖喱酱成了香辣奶油鸡。 

这道菜在短时间里煮过两次了, 第一次是在傍晚阴影的雨天里煮的,拍的不好(最后照片里的5张)。 前几天, 见孩子们都非常的喜欢吃这道菜肴,所以又煮了,还把食谱重新的调理了一些, 也使这道菜肴更加的美味了, 当然也顺便的重拍了一些照片。

窗外又是连绵细雨, 只好把食物捧到庭子里拍了。 
  


谁知拍至一半时,既然把苍蝇也给引来了, 我还得叫女儿来赶苍蝇呢! 


香辣奶油鸡(Butter Milk Curry Chicken)
(食谱:厨苑食谱)

材料A
3只鸡腿肉(起骨切块, 加入腌料腌至30分钟), 150克淡奶, 50克鲜奶油

材料B:
3支香茅(切碎), 2支咖哩叶, 3条红辣椒(去籽切片),5片疯甘叶, 2大匙田师傅咖喱酱,2大匙奶油

腌料
1粒蛋, 1大匙蚝油, 3/4大匙糖, 1大匙酱油, 1小匙麻油, 1小匙胡椒粉, 2大匙粟粉

调味料
1小匙盐, 1小匙糖

做法
1. 熱油锅, 将鸡块放入熱油里炸熟或金黄色香脆, 取起, 沥干油份。
2. 烧熱锅, 加入奶油煮至溶解, 加入所有的材料B炒香, 加入淡奶和鲜奶油煮沸。
3. 加入调味料, 最后将炸香的鸡块加入, 以大火稍微炒至均匀即可。

【 Butter Milk Curry Chicken】

[Ingredients A]
3 whole chicken leg (deboned)
150g evaporated milk
50g whipping cream 

[Ingredients B]
3 stem lemon grass (chopped)
2 stalk curry leaf
3 red chillies (diced)
5 kaffir lime
2 tbsp instant curry sauce
2 tbsp butter

[Marinade]
1 egg
1 tbsp oyster sauce
3/4 tbsp castor sugar
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp pepper
2 tbsp corn flour

[Seasoning]: 1 tsp salt, 1 tsp sugar

[Method]
1. Cutchicken into pieces season with marinade for 30 minutes. Deep-fry in the hot oil at high heat until golden in colour and crispy. Remove and drain.
2. Melt butter in the wok, add ingredient B and stirring until aormatic. Add in evaporated milk and seasoning, bring it to boil.
3.Add fried chicken pieces, keep stirring at high heat until well combined and sauce is slightly aborded. Disp up and serve.


光是摄影的灵魂,这话绝对不假, 第一次煮时窗外也是下着雨, 只能在厨房的窗口下拍了。 其实大致上,我所有的菜肴都是在厨房的窗口下拍的,因为每次煮完饭菜后, 天都开始阴暗了, 也只有厨房的窗口下才会有一些些的光线, 一些些的微光。 


雨天, 屋里更加显得阴暗,实在难拍照。 没办法之下就叫女儿捧着这道香辣奶油鸡,在屋外的走廊里拍了! 嘻嘻
