椰蓉面包 Coconut Buns




没有面粉,没有奶油,也没有蛋糕。只有纸张,笔和小公主的课本。 大公主自己能“搞点”自己,不须太多的监督,更不必我费尽心思的讲解。  反而是小公主,就算是我大费周章,亦是枉然。所以啊,往往我会想算了吧,也许就如我家那老的说:小时了了,大未必佳。每次当我听到这句名言,我都会反问:那么,我们的小公主一定是“小时不了,大一定佳啦”!惹来总是他那哈哈的笑声!

这又是之前做的旧作,如今只好趁这没有面粉,奶油,度日的日子里,派上用场了。
唉!还有一个星期要捱呢!






椰蓉面包 Coconut Buns
(可做9粒)

Tangzhong dough 汤种法:-
75g bread flour  75克高粉
55ml hot boiling water 55毫升热水

Method 做法:-
1.  把高粉放入里。Put flour in a mixing bowl.

2.  加入热水,用汤匙将面粉混合成面团。Add hot boiling water and mix well to the dough.

3.  然后,用保鲜纸盖上。放入冰箱里1小时至48小时。Cover bowl with cling film and put in the fridge for at least 1 hour, and up to 48 hours.

Coconut fillings:-椰蓉馅料

A. 2tbsp sugar, 2匙幼糖
   200g gula Melaka, cut into chunks 200克椰红糖磨碎
B. 280g fresh grated coconut 280克白椰丝
C. 45ml water 45克水
D2tsp corn flour+2tsp water 2小匙粟粉+2小匙水

Method 做法:

     1.把(A)材料放入锅里煮溶。将(B, 和(C)材料加入, 翻炒均匀。
        Cook (A) ingredients until sugar dissolved, add in ingredients (B) and (C) stir until
        almost dry.

     2. 最后加入(D搅拌均匀即可Add in (D) and combine well.

Basic sweet bread dough 制作甜面团:
1 tangzhong dough 1汤种面团
A225g bread flour225克高粉
   75g plain flour75克普通面粉
   60g sugar60克幼糖
   1 tsp instant yeast 1小匙干酵母
   1/4 tsp salt1/4小匙盐
B120ml cold water120毫升冷水
   1 cold egg 1粒蛋
   45g butter45克牛油

Method 做法

      1.  混合所有(A)的材料。
Combine (A) ingredients.

      2.  把汤种面团撕片加入蛋碗里。
Tear the tangzhong dough into pieces and add along with the eggs.

      3.  搅拌机搅拌,低速度。再慢慢的加入冷水。
Using a stand electric mixer, mix on low speed and add in cold water.

      4.  混合直到面团结合一起。 
Mix until dough is well combined and leave the sides of bowl.

      5.  将牛油加入面团里,用中速搅拌至光滑。
Add in butter and mix with medium speed until dough is smooth.

      6.  把面团成圆团,将面团放在盆中,盖上一块湿布,发酵40分钟至双倍大。
Shape dough into a ball, leave to proof for 40mins until doubled.

              7.把甜面团分成每份55然后休面10分钟。
                          Divide sweet bread dough into 55g each, rest for another 10mins.
      
   8.将甜面团擀扁,包上馅料30克。把包好馅料的面团放在,发酵45分钟。
      Flatten the dough and fill in coconut filling 30g each, wrap into dough.
      Let it proof for 45mins.

   9.搽上蛋黄,放入中间层预先烘热的烘箱里,烘烤17012-15分钟.
     Egg wash and place in the middle shelve of the oven. Bake at 170c for
     12-15mins.
