印尼炸鸡 (Indonesian Fried Chicken, Ayam Goreng Kremes)






总是听到周围的人, 发着牢骚,  抱怨着日子过的不如意, 仿佛身处于漆黑的陷阱里。 其实人生中真的有太多的无奈,很多事情只要学会放下,勇于放下,那么明日便是个好天了。人生中难免会经历一些酸甜苦辣, 勇于面对,才是心的豁达。 

若感觉好,那么明日便是晴天!





小叮当口袋里就是不缺鸡的菜肴了,随手摸索就抓来了这道万事俱备,一按“publish"就出发的印尼炸鸡了。 


印尼炸鸡 , 食谱取自indochinekitchen

材料A:
5个鸡腿, 3个鸡翼
2大匙粘米粉, 2大匙面粉, 1/2小匙发粉, 适量炸油

材料B: 
8 瓣蒜, 8粒红葱, 5粒石古仔

材料C:
2大匙芫荽粉, 1/2大匙盐, 300克清水, 10片沙兰叶( salam leaf/ daun salam)


做法
1.  将所有材料B打烂,  加入鸡只和材料C,以中火煮20分钟。 
2.  取出鸡只, 把3种粉类加入汤汁里, 搅拌均匀, 静置15分钟。加入发粉, 混合均匀。
3.  热适量油锅, 倒入1/2杯的做法(2)鸡汤, 以中火煮至几分钟或煮至酥脆转变金黃色。
4.  沥干油份, 放在紙巾上,继续做煮完其余的鸡汤。
5.  热油锅,  将鸡只以中火炸至金黄色或至熟, 配合香酥脆享用。 




Indonesia Fried Chicken】

IngredientsA:
5 chicken drumstick, 3 chicken wings
2 tbsp rice flour, 2 tbsp plain flour, 1/2 tsp baking powder, oil for deep-frying

Ingredients B: (pounded)
8 garlic cloves, 8 shallots, 5 candlenuts

Ingredients C:
2 tbsp ground coriander seeds
1/2 tbsp salt
300 g water
10 salam leaves

Method:
  
1. Combine ingredients B, chicken and ingredients C in a pot, cook over medium heat for 20 minutes.
2. Remove chicken from the pot and set aside. Strain leftover stock into a container. Add all purpose flour and rice flour, whisk well. Let cool, about 15 minutes. Add baking powder into the stock and stir well to combine.
  3. Heat up oil, pour 1/2 cup of stock into the oil, cook over medium heat for a minute, until the stock turns into golden brown crunch.
4. Remove using slotted spoon and drain on paper towel. Do this with the rest of the stock.
5. Deep-fry chicken over high heat till golden brown. Serve fried chicken over kremes crunch.
