这蛋糕做过两次了, 很香很不错的蛋糕, 就是喜欢它那浓郁的摩卡香味。 总之是一打开盖子, 就是香味扑鼻而来, 令人忍不住伸手又拿了一块。 只是这蛋糕特别容易碎和掉渣的, 女儿说她在学校吃后还要拿起扫把扫地呢!哈哈。。,
第一次做时用了长形模, 因太夜了没时间拍就直接分切吃掉了, 那时就告诉自己, 这蛋糕我一定会重做的。 所以这次, 我敲了3粒蛋以6寸圆模来烘烤, 也稍微做了一些更改,蛋糕出炉后恰好满模。 虽然蛋糕依然还是有少许的掉碎, 但却是绝对好吃的蛋糕哦!
A. 6茶匙速溶纯咖啡粉 + 3小匙热水(混合)
B. 230克奶油(室温),150克糖粉,3粒蛋,150克低粉, 4大匙鲜奶油
1/2茶匙苏打粉,30克可可粉,60克全麦粉,60克奥利奥饼干碎
表面装饰:迷你奥利奥饼干
做法:
1. 将奶油和糖粉用刮刀搅拌后, 再以搅拌机打发均匀。
2. 分次加入全蛋液,每次都必须等至蛋液充分被搅拌后才加入另一份量的蛋液。
3. 加入咖啡液及鲜奶油拌匀。
4. 将过筛的底粉, 苏打粉及可可粉混合加入, 切拌均匀。
5. 然后加入全麦粉,以不规则手法拌匀, 不可过度搅拌。
6. 最后加入奥利奥饼干碎, 快速搅拌拌匀。
7. 倒入一个6寸圆模(底部铺上油纸),表面铺平再铺上米妮奥利奥饼干。
8. 送入预热烤箱里以160度烘烤50分钟或以牙签插入不带出湿沾的面糊即以熟透。
A. 6 tsp instant coffee powder + 3tsp hot water(mix well)
150g icing sugar,3 eggs, 4 tbsp whipping cream
150g low protein flour, 1/2 tsp soda powder
30g coco powder,60g whole wheat flour
60g crushed oreo biscuit
Topping: mini oreo biscuit
Method:
1. Mix butter and icing sugar with a spatula, then change to electric whisk, use medium speed and beat until light and frothy.
2. Add in egg, beat well after each addition of egg until creamy .
3. Add in coffee liquid and whipping cream and mix well.
4. Fold in shifted flour, soda power and coco power, mixed to combine.
5. Then add in whole wheat flour, mix well (whisk in different direction) and do not over mixed.
6. Last, add in crushed oreo biscuit, quick stir and mix to incorporate.
7. Pour the mixture into a 6"round cake tin with greaseproof paper , spread evenly and arrange on top with mini oreo biscuit.
8. Bake in preheated oven at 160C for 50 minutes or until a skewer inserted into the cake comes out clean.

ReplyDelete亲亲啊, 这蛋糕的香味比摩卡海绵蛋糕香很多很多。。。。但是要比好吃啊,俩者都好, 但是我还是会选这个摩卡全麦蛋糕, 虽然它吃后要扫地! 哈哈哈。。。
